Distilling a London Dry Gin
Today, London Dry Gins are still made using traditional methods. First, juniper berries are macerated in neutral grain alcohol for 24 hours before being distilled in copper stills. This process creates an aromatic spirit with a strong juniper flavour profile. The spirit is then redistilled with botanicals like coriander, angelica root, orris root, liquorice root, orange peel, lemon peel, and cassia bark for added flavour complexity. The final product must not contain sugar or other sweeteners to be considered a true London dry gin.
